In addition to setting unavailable dates, let team members choose how often they’d like to serve (e.g., available all month but only want to serve 2 out of 4 weeks). It would also be helpful to allow a “dates available” option, where someone can mark only the dates they are available. Useful for team members who can serve only occasionally.
